I was browsing through Cabelas website and came upon this photo. This sucker would make lots of meatballs. MM and I were at a Super Bowl party a few years back, and we both took some barbecued meatballs that were being served. I remember thinking to myself, these meatballs don't taste right; I thought it was just some really bad barbecue sauce. Some guy came up and said, "what do you think of the elk meatballs?" Yuck. Give me cow meat any day.
Now that he shot the thing, how the heck do you get something this size back to your camp? The antlers would make a great hat rack.
We just went to Cabelas and dropped a couple hundred dollars on shoes for our Texas trip. I got a pair of Keene sandals. Evidently I can no longer go barefoot with the diabetes, even at the beach. Man I love that store. I'd love to win a shopping spree there.

I bought some elk in your town and I agree - it's a tougher meat, not so good as beef.
That reminds me - remember the scene in "funny farm" where Chevy Chase is invited to eat "Lamb Fries" until he breaks the record and he finds out they're sheep balls.
i eat deer all the time. never had elk, though i hear its better than deer, and a little closer to beef.
but still tougher than beef, as all game meat is tougher than farm rasied, specially bred beef.
deer and elk lack the fat marbling that beef is bred for.
I'd tend to blame either the hunter or the cook. "Gamy" taste of meat generally results from adrenaline when a hunter makes a lethal shot that allows the animal to try to run away, and also from improper handling of the carcass. You'd get that same gamy taste with beef if you shot the animal in the leg or stomach and then chased it a mile or two until finally bringing it down, and then failed to get, skin, and chill the carcass properly.
The toughness and dryness of elk is well dealt with by aging & marinading. Yes, it isn't beef, but it can be very good.
And how to get it to your truck? You skin it, quarter it, and haul it out in four or more very tiring hikes. Unfortunately, I haven't had the chance to do this.
