The MN Hot Dish: nothing in the world compares

Our church had a pot-luck and caroling outing tonight. I didn't go caroling; I stayed behind with a few others and guarded all the hot-dishes. I can honestly say---I would rather eat at a MN pot-luck dinner than go to the finest restaurant in the world. Well, ok, I might choose a Texas Roadhouse meal over a pot-luck; but there aren't many other places I'd rather eat at.

When we were on family vacation two summers ago we ate at a Texas Roadhouse, and that immediately became our favorite restaurant. The only problem now is, the closest one is about a 4 hour drive, in Northern Iowa somewhere. We had said we'd make a road-trip sometime and go down there; but we haven't done it yet.

In the meantime, other than eating at home, it's either Old Country Buffet, or we wait for a good old pot-luck to come up and go pig out. Mocha-momma made up some kind of spicy chicken enchilada dish for tonight's meal. It was a huge hit. (except with me, I don't do chicken; it has to oink or moo for me to eat it) I pigged out on about 4 different kinds of hot-dish, or casseroles for you non-Minnesotans.
